Published as part of the International Year of Pulses 2016 (IYP 2016), Pulses, nutritious seeds for a sustainable future features thirty recipes from ten international top chefs along with a wealth of information about all varieties of dried beans, their health benefits and cultural significance around the world. It follows the chefs as they go to market to buy pulses and then back to their restaurants or homes, where each chef then prepares easy dishes and gives their best-kept secrets.
In addition to the recipes, the book includes instructions on how pulses can be easily grown at home and provides an overview of how pulses benefit nutrition, health, biodiversity and food security as well as information on the major world producers, importers and exporters of dried beans.
The launch ceremony at FAO will feature a speech by Director General-General, José Graziano da Silva, and UK food writer, Jenny Chandler, will be appointed Special Ambassador for the International Year of Pulses for the Europe region.
A Q&A session will offer the opportunity for questions from the media, and the event will close with the official opening of an exhibit related to IYP2016 in FAO’s atrium.
